several peeps have asked me to post my enchilada recipe, well it's not really my recipe, it's something i've seen made and tweaked it just a bit.
Ingredients:
Corn tortillas
1 - 14oz enchilada sauce (your choice)
1 rotisserie chicken-shredded (you'll use about 2 cups +)
2 cups of shredded cheese (I used pepperjack)
Handful of chopped cilantro (save a bit to top it off)
1 chopped white onion
1 tbsp of extra virgin olive oil
1 chopped garlic clove
Pinch of cinnamon
Heat oven to 375 degrees
Sautee chopped onion in the oil with the chopped garlic until tender. Add enchilada sauce, chopped cilantro, and shredded chicken to warm up. If you'd like more spice to the sauce add some hot sauce or chili flakes. In the meantime warm up tortillas and keep warm in foil. When the sauce warms up add some to the bottom of casserole dish and start assembling the enchiladas with the sauce mix and cheese. Top the enchiladas with the remaining sauce, cheese and cilantro. Put in oven until cheese is melted.
I made this recipe last week and it yielded about 9 enchiladas.
