Elly - I love the poultry mix of herbs, it has all my favorites! I use it for lots of things, especially pumpkin-related, of course :)

De-Glazing is certainly a beautiful thing! I've always enjoyed the addition of a butter just to give the sauce an added richness and sheen.

A quick tip for keeping herbs. With a damp paper towel, wrap your herbs, place the bunch in a Ziploc bag, and move it to the fridge. It should keep for a few extra days, resilient parsley can keep for up to five days at times.
